Always looking for another way to use Trader Joe's Lemon Curd.
Mix the dry ingredients together.
Stir wet ingredients into dry.
Make pancakes!
Drizzle with melted lemon curd + fresh berries.
Yum??
Nope. Not yum. At all. Edible, but not yum! What went wrong? I'm sort of confused. I read and reread the recipe, but it wasn't light nor fluffy like the ones @ Norma's I had a couple of weeks ago in Palm Springs. And gosh darn it, I'm not ready to give up. Any suggestions?? Help.

On a separate note, I have been pining for norma's lemon cakes too.
I bet Norma's beats the egg whites until fluffy and then folds them into the batter...that makes for a fulffy pancake. Also, if you over mix pancake batter it loses some fluffiness, so just a few stirs until its all combined, then walk away...let it rest a bit before using (like 10-15 min). Scott has been on a mission to perfect buttermilk pancakes, so I consider myself somewhat of a pancake expert now as we eat pancakes way too often!

I also agree with Holly about really beating the egg whites. That's how I get fluffy pancakes. I also always gently fold the egg whites into the batter. I also know you're the kind of cook who knows to do these things so methinks the ricotta might have something to do with the pancake probs. You might want to whip it, try a different type or level of fat e.g. low fat, or maybe even blend in a tiny bit of club soda to try to make it lighter. Just a few ideas...

i also read this post second but, um WOW! Please make a whole post on that ring, it's beautiful!!! Man, i'm just so, wow, happy. You are going to be a stunning bride - and Hudson will be the ring bearer, right? Oh, so so exciting. SO exciting that I don't even care about the pancake incident! (but on that note, yep, definitely try the beaten egg whites).
